Simple Recipe – 3 Ingredient Peanut Butter Oat Bars

I love a healthy snack. Whether it be before or after a workout – or just because I have a sweet tooth! Energy bars are my absolute favorite. For me the key ingredients have always been oats, peanut butter (because let’s face it, who doesn’t like peanut butter?) and nuts. If you can add some chocolate in there too you’ve got me sold.

The cost of these delicious treats can quickly add up, so I love creating these Simple + Delicious Peanut Butter Oat Bars. With a little imagination, you can easily turn them into anything your heart desires by simply adding a few extra items into the mix. Add your favorite protein powder, dried fruit, or even your favorite type of nut. The possibilities are endless!

SIMPLE + DELICIOUS PEANUT BUTTER OAT BARS

Ingredients

3 Cups Old Fashioned Oatmeal

1/2-3/4 cups Natural Honey (I use 3/4 cups for a sweeter taste. I recommend using 1/2 cup if you’re not a huge honey fan)

1  1/4 cup all natural Peanut Butter

 

Directions

–  In a large sauce pan, stir honey and peanut butter over medium heat until the mixture reaches a liquid consistency. Slowly stir in your oats and mix until completely coated.

–  Spread into a baking dish at least 9×9 inches. Cover and refrigerate over night. In the morning take out of the fridge and cut into your ideal sized bars. Wrap individually in non-stick foil. Keep refrigerated until ready to be eaten.

Here are a couple of additions that I’ve tried and love:

 

Dark Chocolate Peanut Butter Oat Bars – Substitute 1 cup Peanut Butter & Co Dark Chocolate Peanut Butter and add 1/2 cup pumpkin seeds + 1 tablespoon maca powder.

Dark Chocolate Chip Crunchy Peanut Butter Oat Bars – Substitute 1 cup natural crunchy peanut butter and add 3/4 cup dark chocolate chips, 1/2 cups pumpkin seeds + 1 tablespoon maca powder.

 

The best thing about these bars – for the cost of about 5-6 bars at a store, you can make triple that amount at home! And as you can imagine, there are many ways you can modify this recipe to create a delicious and healthy energy bar that won’t break the bank.
